Hobart has developed two new slicers: Centerline by Hobart Edge10 (10-inch knife) and Edge14 (14-inch knife). The two slicers add to the company’s offering of Edge slicers with 12- and 13-inch knives. Both units feature a chrome-plated carbon steel knife. A top-mounted ceramic stone sharpener allows the operator to hone in 15 seconds for a consistently sharp knife edge.
The 6801-IP meat saw includes a double tin dip pulley and an integrated meat pusher attachment, which connects to the meat saw. The user can flip it out of the way when not in use and disassemble it without tools for cleaning. Removable, double-flanged pulleys don’t require tools to remove, permitting easy cleaning.
The B-Series line of slicers includes four manual gravity-feed slicers and one automatic model. The slicers come with 9-, 10-, 12- and 14-inch knives for the manual units and a 12-inch knife for the automatic unit. Each knife is made of chrome-plated carbon steel, and each unit features an anodized aluminum finish. Operators can submerge the slicers’ removable carriages in water to further simplify cleaning.

The HS7/HS7N slicer has a 13-inch CleanCut Knife with an alloy edge. The blade removes for cleaning and operators can run it through the dishwasher. The slicer includes a top-mounted Borazon stone sharpener. The gauge plate holds position for consistent, precision slicing. Four carriage speeds operate at 28, 38, 48 and 58 strokes per minute.
This unit is suitable for grating high volumes of cheese. The CL52 features a large whole head hopper to hold blocks of cheese. The unit can complete more than 50 different cuts.

The Defender 4000 Band Saw features blade stopping speeds of less than 40 milliseconds and .040 seconds with a proprietary low inertia high horsepower servo motor, per the manufacturer. The saw also features a specialized drive unit and zero backlash, wash-down duty gearbox.
Once the user makes the first slicewith this product, a countdown timer is initiated internally to track when required sanitation must occur. After the first slice, operatorsreceive notification 3½ hoursthat in 30 minutes,they must unplug, clean and sanitize their slicers. A similar alert occurs 15 minutes prior to the 4-hour mark. If the operator does not unplug, clean, sanitize and plug the slicer back in within the required time, the slicer powers off and cannot be restarted until the necessary steps are followed.
