Undercounter warewashers are designed to clean specific types of items. For operators who require warewashing in the front of house or behind a bar, low-temp machines are a more common choice due to the lack of hot steam escaping from the machine and cooler glass temperatures after washing.
Although glassware dries more quickly with fewer spots when washed in high-temp units, there can potentially be fewer pours from a keg when beer is dispensed in a warm mug or glass. High-temp warewashers are more effective at breaking down solids and fats on glasses, dishware and flatware, eliminating lipstick marks and finger smudges.
