Refrigerated prep tables are an integral piece of foodservice equipment in most commercial kitchens. These units provide prep and storage space for foods like vegetables, cheese, meat and fruit that need chopping, cutting, slicing or other preparation prior to use.
Sandwich shops and other restaurant concepts have moved prep tables to the front of house, where these units serve more as display and merchandising tools.
As a result, this equipment can be utilized in the front of the house as a self-service salad bar or a visible sandwich station, in addition to its back-of-the-house applications.
These tables also have been used as breading stations in the kitchen.
