If there is an oven on the base, it can be used for baking, roasting, warming, broiling or even storage. Instead of an oven, some operators will opt to place refrigerated or freezer drawers in the base.
In an effort to meet consumers' ever-evolving palettes, many operators continue spice up their menus with international dishes and new style cuisines. To accommodate this, customized ranges may be equipped with a plancha grill versus a traditional sauté station.
