Bill Montagne was named chef de cuisine for the Thompson Chicago, a luxury hotel in the Windy City’s Gold Coast neighborhood.
In this role, Montagne leads the culinary team at Thompson Chicago and onsite restaurant Nico Osteria, a seafood-inspired Italian concept helmed by One Off Hospitality Group and James Beard-lauded Chef Paul Kahan.
Montagne’s brings a diverse culinary background to his new role. He most recently owned and operated Snaggletooth, a casual seafood restaurant and immediately prior to that Montagne served as corporate chef for the fine dining division of Lettuce Entertain You Enterprises. His background also includes working at Chicago fine dining restaurants Les Nomades and NoMi as well as New York restaurants Le Bernardin and Relais & Châteaux.
