Maintain Thermostats, Control Systems

The performance of kitchen appliances naturally degrades over time. Thermostats and control systems can drift out of calibration or even fail outright. Foodservice operators should take the time to periodically check thermostats and other controls and recalibrate as necessary. Also, operators should repair or replace broken control panels on ovens, steamers and other appliances that feature control systems, and replace missing knobs on manually controlled appliances like ranges, griddles and broilers. These measures will improve cooking performance and kitchen appearance, and reduce energy use.
