Calling All Chefs … with 5+ Years Experience!
July 10, 2008
something new: The Culinary Institute of America is offering a new advanced certificate program for chefs with five or more years of experience in commercial and non-commercial kitchens across the country. The CIA calls it the Culinary Enrichment and Innovation Program (CEIP).
Following an application process, the CIA will select 16 chefs to participate in an 18-month program that consists of a quintet of three-day segments, which will take place throughout the year. The selected chefs get to come to the CIA in Hyde Park, N.Y., and learn from some of the best culinary instructors in the country. Sign me up! Well not me, but maybe you, somebody you know, or your employee.
The three-day sessions will be jam-packed with time in the kitchen, of course, but also with speakers and other educational components. Each session will focus on a topic specifically relevant to the next generation of culinary leaders. Classes will range from flavor dynamics and health and wellness to leadership and innovation strategies. And here’s a cool one: menu development, both in terms of creativity and profitability/budget. While always relevant, this subject seems even more timely and important as we read more about food costs continuing to escalate.
The Details and Deadline
Chefs can apply to the program by submitting an application to the CIA by Aug. 1. Click here to apply. Notification of acceptance will occur by Aug. 29. Hormel Foods is picking up tuition — students are responsible for their transportation, lodging and personal expenses.
Here’s the schedule of classes:
Oct. 28-30
March 31-April 2
Oct. 6-8, 2009
April 13-15, 2010
Graduation: April 15, 2010
