Chain Expansion Report

Bennigan’s, CPK and other chains announce expansion information.

• Baja Fresh opened its first Baja Fresh Express at Los Angeles International Airport and the University of Southern California in Los Angeles. 
• Bennigan’s Franchising Co. announced the opening of a Bennigan’s Grill & Tavern franchise location in Acapulco, Mexico. The restaurant is owned and operated by Bennigan’s franchisee Consorcio Restaurantero Athene of Mexico, and is their eighth location in that country, with others planned for later this year.
• BJ’s Restaurants opened a location in Chino Hills, Calif., bringing its total number of stores to 79.
• Buffalo Wild Wings announced the completion of nine Las Vegas franchised restaurants.
• California Pizza Kitchen opened one location each in Turmon Bay, Guam and in Roseville, Calif.
• Einstein Bros. Bagels announced it will continue its aggressive expansion plan with its 20th new, licensed location at the University of North Texas. The chain plans to add at least 15 more licensed units before the end of the year.
• Red Robin Gourmet Burgers opened a restaurant in Aurora, Colo., and in Chesterfield, Va.
