Today’s Recipe: Portuguese ‘Churrasquera’ Chicken

Ingredients

  • Two 3 lb. (1.36 kg) chickens
  • 3 lb. (1.36 kg) Yukon gold potatoes, cut into wedges
  • Marinade
    • 1/2 C. (11. ml) olive oil
    • 1/4 C. (59 ml) tomato puree
    • 8 garlic cloves, minced
    • 3 t. (44 ml) honey
    • 1/4 C. (59 ml) Portuguese Pimienta puree
    • 1/2 t. (3 ml) oregano
    • 1 t. (5 ml) ground cumin
    • 2 t. (10 ml) Kosher salt
    • 3 T. (15 ml) lemon juice

Preparation

Mix marinade and divide into 3 containers. Marinade chicken in one container of marinade for 1 hour up to 6 hours. Toss potatoes in another container of marinade.

Preheat rotisserie to 300°F (149°C). Skewer chickens and place potatoes into a roasting basket. Program rotisserie to roast for 35 minutes at 300°F (149°C) then 350°F (177°C) for an additional 10-15 minutes.

Serve the chickens with the remaining marinade, potatoes and salad.
